Trifle
Layered sponge, custard, fruit and cream in a glass bowl.
About Trifle
Sponge soaked in sherry is layered with fruit or jelly, custard and whipped cream in a glass bowl so the strata show through. It is a centrepiece of British Christmas and celebration tables.
🏛️ History & Culture
Trifle's origins are debated, but it evolved from earlier English "fools" and "custards" in the 16th century, with the first known printed recipe appearing in the 1590s. The name likely derives from the French word "trufle," meaning something whimsical or of little consequence, reflecting its playful layering of cake, alcohol, and cream.
Regional variations include Scottish tipsy laird (using raspberry jam and whisky) and Irish trifle often made with custard and fruit, while in England, sherry or Madeira wine is traditional, but fruit juice or non-alcoholic versions are common for children. It became a staple of British Christmas and celebratory tables in the 19th century, prized for its visual spectacle when served in a glass bowl, and remains a symbol of homey, festive indulgence across the UK.
