About Bonchester Cheese

Bonchester Cheese is a small, hard, cloth-bound cow's milk cheese made at Bonchester Bridge in the Scottish Borders, near Hawick, by the multi-award-winning Bonchester Cheese Company. It is a territorial-style cheese modelled on traditional farmhouse Cheddars: the curds are hand-ladled, lightly cheddared, moulded in muslin, pressed, and then aged for 8 to 12 months. The rind is wrapped in a cheesecloth bandage that becomes a characteristic wrinkled, dark crust as the wheel matures, and the paste inside is a deep ivory to pale gold, with a firm but not crumbly texture and the occasional small fissure.

Flavour is savoury and concentrated, with notes of roasted nut, caramelised onion and grassy butter, finishing with a clean, long, brothy tang that has made it a regular winner at the British Cheese Awards. Bonchester is one of the small handful of farmhouse hard cheeses produced in the Scottish Borders and is sold directly from the farm, at Scottish farmers' markets, and through selected cheesemongers across the UK.
