Alpha Tolman is an Alpine-style raw cow's milk cheese made by Jasper Hill Farm in Greensboro, Vermont, in the state's Northeast Kingdom. Inspired by Alpine cheeses such as Appenzeller, it is a pressed, cooked-curd wheel aged in the Cellars at Jasper Hill, where the wheels are washed and turned as they mature for roughly eight to twelve months.

The cheese is named after Alpha Tolman, a Greensboro dairy farmer and philanthropist who funded the town's public library in the early 1900s. Young wheels are buttery and fruity; with age the paste turns dense and caramelized, picking up bold meaty, nutty flavors. It melts well, which makes it a favorite for fondue and raclette-style cooking as well as the cheese board.
