About Fritule
A batter flavoured with rum, citrus zest and raisins is dropped by the spoonful into hot oil and fried into bite-size doughnuts, then dusted with icing sugar. They appear at Croatian Christmas markets and festivals.

Fritule are a traditional Croatian fried dough treat closely associated with the Advent and Christmas season, particularly along the Dalmatian coast and in the capital, Zagreb. Their exact origins are debated, but they share clear similarities with other Mediterranean fried pastries, such as Italian fritelle and Venetian fritole, suggesting a centuries-old exchange of recipes along the Adriatic trade routes.
Regional variations abound across Croatia and neighboring countries: some recipes add brandy or grappa, others include mashed potatoes or apples, while certain islands and inland regions call them “blinci” or “miške” and shape them differently. Beyond their festive role at Christmas markets, fritule are a symbol of homey conviviality, often fried in large batches for family gatherings and community celebrations, dusted with powdered sugar and occasionally served with marmalade or chocolate.
