Tuna is gently stewed with potato, pepper and onion in a paprika-tinted broth, the potatoes broken to thicken it. It was the one-pot meal of Basque tuna fishermen at sea.

Marmitako is a traditional Basque fisherman's stew, born from the simple need for a hearty, one-pot meal aboard tuna-fishing boats in the Bay of Biscay. Its name derives from the Basque word marmita, meaning "cooking pot," and the dish historically relied on the day's catch of bonito or albacore tuna, along with potatoes, onions, peppers, and tomatoes in a paprika-scented broth.
Today, marmitako is cherished across the Basque Country and Cantabria, with regional variations that may add white wine, garlic, or even a touch of chile. While its exact origins are debated—some trace it to the 17th-century maritime trade, others to later coastal villages—it remains a symbol of Basque maritime identity, now served in homes and restaurants as a comforting winter stew rather than strictly at sea.
