Almonds are bound with honey, sugar and egg white into a nougat that can be hard and brittle or soft and chewy, depending on the region. It is the essential Spanish Christmas sweet.

Turrón's origins are debated, but it is widely recognized as a legacy of the Moorish presence in the Iberian Peninsula, where almonds, honey, and sugar formed the basis of many confections. The sweet became deeply associated with the region of Alicante, particularly the town of Jijona, which claims the oldest documented references to its production. Over centuries, it evolved from an Arab delicacy into a Spanish festive staple.

The two most iconic regional varieties are the hard turrón de Alicante, made with whole blanched almonds, and the soft turrón de Jijona, which uses ground almonds for a creamy, chewy texture. Beyond these, countless variations exist, incorporating chocolate, fruit, or egg yolk. Today, turrón is the essential Spanish Christmas sweet, appearing in every market and household during the holiday season, symbolizing family gatherings and shared tradition.
