Aguachile

Regional variations abound, with some cooks adding cucumber, red onion, or even mango for sweetness, while others ramp up the heat with habanero or serrano chiles. Culturally, it is a staple of Sinaloan beach cuisine and a celebratory dish, often enjoyed fresh at seaside eateries and family gatherings, embodying the bold, vibrant flavors of Mexico's Pacific coast.
