About Jamón Ibérico
From black Iberian pigs that roam oak forests eating acorns, this ham is salt-cured and aged for years until the fat turns nutty and the meat dissolves on the palate. The finest grade, bellota, is among the world's great cured meats.
🏛️ History & Culture
Jamón ibérico comes from the black Iberian pig, a breed native to the Iberian Peninsula, and its curing tradition is centuries old. The pigs are raised in the dehesa, a pastoral oak-forest system concentrated in southwestern Spain, where the bellota (acorn) diet gives the ham its signature flavor. The exact historical origins are not precisely recorded, but the practice of salting and air-drying hams has been part of rural Spanish life for many generations.
Regional identity is protected through denominations of origin such as Dehesa de Extremadura, Guijuelo, Jabugo, and Los Pedroches, each with its own curing style and aging length. The finest bellota grade requires pigs to forage on acorns during the montanera season, and hams may be aged 24 to 48 months or more. In Spain, jamón ibérico is a centerpiece of festive meals and tapas culture, and expert ham carving is a celebrated skill.
