Xifengjiu is a baijiu (white liquor) produced in the Fengxiang area of Shaanxi Province, where its history is often traced back to the Zhou Dynasty, though its exact origins are debated due to limited historical records. It is distinguished by a unique "phoenix-type" (fēngxiāng) aroma, which results from a fermentation process involving mud pits and a blend of sorghum, wheat, peas, and barley.

As one of China's most celebrated spirits, Xifengjiu has been recognized among the nation's famous liquors since the mid-20th century, often associated with imperial banquets and regional ceremonies. Its name references the phoenix, a symbol of fortune and rebirth, while production remains concentrated in Fengxiang County, preserving a distinct local character despite variations in aging and blending.
