Cassareep

Rooted in Guyana, Cassareep is a condiment enjoyed for generations. It brings together cassava.

Cassareep's origins trace to the indigenous peoples of the Guianas, who developed a method of boiling down cassava juice into a thick, dark syrup. This technique served both to detoxify the bitter cassava and to create a natural preservative, allowing the condiment to last for extended periods without refrigeration. Its name derives from the cassava root itself, and it has been a fundamental element of Guyanese cooking for centuries.

While similar cassava-based syrups exist in other Caribbean countries, cassareep is most closely associated with Guyana, where it serves as the defining flavor of the national dish, pepperpot. This rich, bittersweet condiment is particularly significant during the Christmas season, when pepperpot is traditionally prepared and shared among families. Its role as both a flavoring and a preservative reflects the resourceful culinary practices of the region, and production remains a cherished craft, often made from freshly grated cassava.
