Francesinha

Francesinha is the signature sandwich of Porto, in northern Portugal. Layers of bread are stacked with cured ham, fresh sausage and steak or roast meat, blanketed in melted cheese and then drowned in a hot, thick sauce built from tomato, beer and spices. A fried egg on top and a mound of golden fries make it a full meal.

Every café in Porto guards its own secret sauce recipe, and locals debate fiercely over who serves the best. It is rich, messy and gloriously indulgent — food designed to be shared and argued about.

The dish was created in the nineteen-fifties by Daniel da Silva, a Portuguese emigrant who had worked in France and Belgium. He adapted the French croque-monsieur to bolder local tastes, and the name — “little French girl” — nods to that origin.

Today francesinha is inseparable from Porto's identity, a point of civic pride served everywhere from humble tascas to modern gastropubs. Pairing it with a cold beer and fries is practically a local ritual.
