Kleftiko
Lamb slow-baked in parchment until falling apart.
About Kleftiko
Lamb is marinated with lemon, garlic and oregano, sealed in parchment or a clay pot and baked slowly until it falls off the bone. Its name recalls the klephts who cooked stolen meat in sealed pits to hide the smoke.
