Rượu is one of the classic dishes in the drink tradition of Vietnam. It brings together rice and wine.

Rượu, the traditional rice wine of Vietnam, has been crafted for centuries, with its origins deeply rooted in the agrarian lifestyle of the country. While the exact historical timeline is not precisely documented, it is widely accepted that the practice of fermenting glutinous rice into alcohol predates written records, making it one of the oldest beverages in Vietnamese culture. Regional variations abound, reflecting local ingredients and techniques. In the north, rượu nếp is a sweet, cloudy wine made from glutinous rice, while the central highlands feature rượu cần, a fermented drink sipped through a bamboo tube from a shared jar, often infused with herbs. The south is known for rượu đế, a stronger distilled variant.
