Saltimbocca
Veal scaloppine with prosciutto and sage in white wine.
About Saltimbocca
Thin veal escalopes are topped with prosciutto and a sage leaf, pinned together and pan-fried, then finished with a quick white wine and butter sauce. Its name means jumps in the mouth, for how readily it disappears.
