About Basa
Basa is a creamy fresh-dairy spread from Slavonia, the fertile plains of eastern Croatia. It is made by whipping soft fresh cheese (svježi sir, similar to a mild cottage or curd cheese) together with rich sour cream until smooth, then seasoning the mixture — most classically with sweet red paprika that tints it a warm pinkish-orange, along with salt and, depending on the household, finely grated onion, garlic, or a pinch of ground chilli.
The result is tangy, spoonable and gently savoury — somewhere between a soft cheese and a dip. Basa is eaten spread thickly on fresh bread or as part of a Slavonian spread of cured meats, cheeses and pickles. Every family guards its own ratio of cheese to cream and its own level of paprika, so no two batches taste quite alike.

Basa is pure Slavonian farmhouse food, born of a region where nearly every rural household kept a cow or two and turned the daily surplus of milk into cheese and cream.
