Calçots

The calçot is a type of onion traditionally grown in Catalonia, particularly around the town of Valls in the province of Tarragona. Its origins are often linked to a local farmer in the late 19th century who supposedly discovered the technique of “calçotar”—covering the young shoots with soil to produce longer, sweeter stems—though this story is more legend than documented history. The distinctively sweet, elongated onions are then charred over open flames, giving the calçotada its signature rustic style.

The calçotada is a cherished winter ritual in Catalonia, typically held between January and April, where friends and families gather outdoors to grill the onions and eat them with romesco sauce, often alongside grilled meats and bread. While the practice is most strongly associated with Valls, calçotades are now celebrated across Catalonia and beyond, with local variations in the sauce and accompaniments. The meal is deeply communal, traditionally eaten with bare hands, wearing bibs, and tipping the head back to swallow the peeled onion whole—a custom that underscores its festive, informal, and culturally significant role in Catalan social life.
