Grilled Cheese

The American grilled cheese sandwich is bread, butter and cheese — sliced sandwich bread spread with butter on the outside, layered with one or two slices of meltable cheese, then griddled slowly so the bread turns golden-brown and the cheese melts into a hot, elastic layer. The canonical cheese is orange American or mild Cheddar, but Swiss, Gruyère, Monterey Jack, mozzarella and provolone are all in regular rotation.

Texture is the whole game: the bread must crisp without burning, the cheese must melt without separating, and the butter must coat both faces evenly so the sandwich releases cleanly from the pan. A heavy skillet, low heat and a long griddle time (around 4 minutes per side) is the secret most diner cooks swear by.

The sandwich rose to its American-diner form in the 1920s–30s when inexpensive sliced bread and pre-sliced processed cheese became available, and was popularised through National Grilled Cheese Month campaigns. It is a permanent menu item at diners, truck stops and school cafeterias across the country; in 2024 the U.S. Postal Service even released a Grilled Cheese stamp from the American Vending manufacturing hub of Kenosha, Wisconsin.
